looks to me like a 1300 single point injection engine from a late 1993 or 1994 samurai
Can't tell the CC really though as the head and block look pretty much identical

Should have 1298cc stamped on the exhaust side of the engine near the gearbox

I am 99% sure its 1600 out of a Vit. Wasn't sure on the SPI.

How can I tell if it is SPI or Carb?

I am new to Petrol engines all my knowledge is with the landrover 2.5 Diesels

That's SPI

As twiss says it will have the capacity stamped on the side of the block.

It has a really bad idle. revs between 500 - 2500rpm and then dies.

is this a common problem with SPIs? Where is the best place to start looking.

Can I and should I change to a SU Carb, or should I fix the SPI?

Could be something as simple as a vacuum leak, there's not a huge amount of electrics on the SPI. check all the vac pipes over and if they are ok it could be a sensor etc somewhere? tbh i'm not that clued up on the SPI system.

Will do, I've got a long weekend now, so after picking parts up from you Saturday Morning I intend to spend as much time as possible get her ready for some offroading!

If its a 1.6 engine fitted with the SPI system from a 1.3 maybe that is the cause?
Would probably mean that it's not injecting the right amount of fuel but I am not sure

Not entirely sure either of the differences between the 1.6 SPI system and the 1.3 SPI system

What registration Letter is the Samurai? If its an M or N reg then it may have been an 1.3SPI to begin with
