I grinded off the rest of the door hinge today as I am going to chop part of them away so that I can lift the doors on and off easily? Is this a good idea and has anyone got a decent guide of how to do it to still make the hinges strong?

No idea why you would do that. Just undo the screws and replace them with easy to undo allen bolts.
