Imps are cool, but I've always thought it would be super cool to make a street sleeper out of an Morris Minor.
You'd probably have the Austin owners club come hunt you down and sell your body parts to pay to have it restored though...
Other projects that (I think) could be cool...
Mk1 Ford Capri with a V8. How did the Capri not get a V8 right from the start????
Triumph Stag with more modern, reliable running gear. Anything that lets you cruise (a duratec and a type 9 would do!). Not for me, for my mum - she loves Stags.
Merc 190 drift car
Landcruiser LC80 with Lexus V8 and C303 axles. 44's. Rear axle moved back and arches completely redone to suit the 44's (ala scottie's SJ), rather than jacking the suspension up any further.
A GRP replica LJ80 on SJ running gear.

Gladstone motor spares, capri specialist built a 3.5V8. It was mental!
Best i've seen would be an austin treveller with a 5.7 chevy and a supercharger shoe horned in.
