How long is a piece of string? It depends on how you drive. More is more.

As said the more engagement the better but not so much as to allow the propshaft to bottom out when the suspension is fully compressed.
I've not heard of a minimum recommended amount and propshaft spacers are readily available to compensate for the forward movement.
Is yours already modified as many of them are IE: lift springs ,SPOA
I do know that when propshaft measurements are given 25mm minimum of engagement is quoted so this may be the least you can run at
