No, wouldn't help, what sort of mpg are you getting?

I assume you are running it in 2wd on the road?

Do you have manual freewheeling hubs? are you disengaging these when on the road?

I would check that the SU is all tuned up correctly, and has the correct needle and spring in it.
Mine was very thirsty before I gave it the right needle and (especially) the right spring.

Now, mines not too bad on fuel! Although I find it better with the 1.6 cos you don't have to rag it to go the same speed ;)

Removing your front prop would definitely save you fuel but its not really recommended...
As highlander says, I would invest in some free wheeling hubs if you dont already have them.
When they are set to "free" this has the same effect as removing the front prop, and the front diff and shafts.

(Also means you can still drive home if you bust your front axle ;) )

As above, get free wheeling front hubs and leave the shaft in, so that if ever you need it, it's there.

An example would be; once at a friends house, I drove into his bin (which I do every time I visit, it's a bit of a game), but on this one occasion I reversed into it. The bin went under the bash plate that protects the fuel tank and lifted the rear wheels off the ground. If I hadn't had four wheel drive I'd have had to tow it off.
There's three ways of doing things:

The right way,
The wrong way
And my way, which is like the wrong way but faster.

It might be worth changing the spring as well, it made a massive difference to mine!
You can get them from Burlen Fuel Systems and you want a red spring. They are only about a tenner I think?
